Savory sweet tahini cake


8 eggs, separate the whites from the yolks

¼ teaspoon cream of tartar

1 cup granulated sugar

⅔ cup tahini

½ cup cream

1 teaspoon rose water

1 teaspoon vanilla extract

1 cup all-purpose flour

2 tsp baking soda

1 tsp of salt


1. Preheat the oven to 350 degrees and grease a 9-inch cake tin.

2. In a bowl, beat together egg whites and cream of tartar.

3. Add ½ cup of granulated sugar to the mixture and continue beating until the consistency is fluffy.

4. In another bowl, beat the egg yolks for 3 minutes and add the remaining granulated sugar. Beat for 5 minutes, then fold in tahini, cream, rose water, and vanilla.

5. Sift flour, baking powder and salt into the second mixture. With the help of a whisk, add the first mixture into the second bowl.

6. Pour the mixture into the greased cake tin and bake for 55 minutes.

7. Cool the cake by turning the tin onto a cooling rack. Serve sprinkled with powdered sugar.
